Why I love fall = beautiful scenery at the park and pumpkin all up on my taste buds.
I told my mom the other day, “We need to make some pumpkin muffins soon!” and apparently Udi’s heard me. Just a few days later, guess what came in the mail…GLUTEN-FREE PUMPKIN MUFFINS.
Udi’s Fall Goodies
In my Udi’s package, I received four pumpkin muffins that quickly disappeared, (maybe that’s why my pants are tight this week….) and some gluten-free ginger cookies. It was just what the doctor ordered, and by doctor I mean my food cravings.
The pumpkin muffins were fantastic. I warmed mine up in the microwave for about 10 seconds and it was perfect. I ate the muffin sans butter, which attests to how delicious they are (you know how dry some gluten-free products can be).
The gluten-free ginger cookies were also the perfect little snack. Since they are a bit smaller, you can get your fix without totally throwing yourself off the wagon. The recommended serving size is 2 cookies, amounting to 180 calories. I’m not saying this is the healthiest thing ever, but it does allow you to live a little. (This is the point where I forget about that one night when I ate five cookies in one sitting…)
