Cappello’s Gluten-Free Chocolate Chip Cookies

You all may remember me ranting and raving about this company called Cappello’s that has the best, and I mean THE BEST gluten-free noodles out there. So when I saw their announcement that they were unveiling gluten-free chocolate chip cookies, you can only imagine my excitement.

Cappello’s teamed up with Primate Palate to make the most delicious gluten-free cookies. They are nutrient dense (yes, cookies can have nutrients) and low glycemic. Basically, you shouldn’t feel guilty about eating them because they’re paleo friendly, or at least that’s how I look at it!

The ingredients in Cappello’s gluten-free cookies include Almond Flour, Chocolate Chunks (Evaporated Can Juice, Natural Chocolate Liquor (Non-Alocholic), Non-Dairy Cocoa Butter), Organic Grade B Vermont Maple Syrup, Arrowroot Flour, Organic Coconut Oil, Organic Sea Salt, Organic Vanilla Extract, and Baking Soda. Easy-to-Make Gluten-Free Cookies

I received a 1 pound roll of the cookies in a custom reusable eco-cooler (how cool, literally!) from the company. The great thing about these cookies is that they not only taste out of this world, but they’re actually easy to make, which we all know isn’t always the case when you’re in the g-free world.

To bake the cookies, you just have to slice off 1 inch pieces of the dough and place them on a cookie sheet lined with parchment paper. Then you pop them in the oven for 10 minutes and voila, they’re ready for your taste buds!

Fall Favorites: Udi’s Gluten-Free Goodies

I love fall

Why I love fall = beautiful scenery at the park and pumpkin all up on my taste buds.

I told my mom the other day, “We need to make some pumpkin muffins soon!” and apparently Udi’s heard me. Just a few days later, guess what came in the mail…GLUTEN-FREE PUMPKIN MUFFINS.

In my Udi’s package, I received four pumpkin muffins that quickly disappeared, (maybe that’s why my pants are tight this week….) and some gluten-free ginger cookies. It was just what the doctor ordered, and by doctor I mean my food cravings.

The pumpkin muffins were fantastic. I warmed mine up in the microwave for about 10 seconds and it was perfect. I ate the muffin sans butter, which attests to how delicious they are (you know how dry some gluten-free products can be).

The gluten-free ginger cookies were also the perfect little snack. Since they are a bit smaller, you can get your fix without totally throwing yourself off the wagon. The recommended serving size is 2 cookies, amounting to 180 calories. I’m not saying this is the healthiest thing ever, but it does allow you to live a little. (This is the point where I forget about that one night when I ate five cookies in one sitting…)

The Best Flavored Gluten-Free Popcorn

There’s a new popcorn sheriff in town and she goes by the name of Rachel Michael.

Rachel Michael’s Gourmet Popcorn is the latest and greatest thing to hit the Toledo streets. My co-worker (and awesome foodie), Paula brought in a treat to work one day in the form of Buckeye popcorn…you know, the wonderful peanut butter and chocolate treat us Ohioans go crazy for whenever it’s available. So after sharing this delicious popcorn with the team, I was hooked and HAD to go check it out for myself.

I visited Rachel’s shop last Saturday. It is located on Monroe Street in Toledo, right next to our local Hobby Lobby (so I frequent the area quite often). When I walked in, I smelled the aroma of all things Holy – popcorn, melted chocolate on top of popcorn, pumpkin & caramel all up on popcorn…it was absolutely glorious. Yes, I am a popcorn lover…borderline kernel-obsessed, don’t judge me.

I already knew I loved the gourmet Buckeye flavored popcorn, so I requested a bag of it to take home (a large bag of course). Then, being the magnificent daughter that I am, I purchased a bag of pumpkin popcorn for my mother (so she keeps doing my laundry for me when I drop it off at home).

If I could have bought every flavor of the popcorn, I would have. Flavored popcorn is a great gluten-free treat because it’s safe, it can be healthy, and it’s fun. Everyone loves popcorn, even the gluten-eaters!

If you’re one of my local readers, I urge you to stop at Rachel’s shop as soon as possible. This weekend is full of Grand Opening festivities, starting Friday, October 18th with a live broadcast from 92.5 KissFM and a ribbon cutting with Toledo Mayor Mike Bell! Liz Lovely Gluten-Free Cookies are Off-the-Chain

If you watch Shark Tank religiously like I do (which by the way, the new season premieres this Friday, September 20th), you may have seen Cowboy Dan and Liz Lovely on the tube talking about their superior gluten-free cookies. As soon as I saw the episode last year, I of course sent the company an email asking if I could review their goodies. The answer was YES and I fell in love with the company immediately after the first bite a few weeks later.

But now I love Liz Lovely EVEN more because they recently announced the fact that they are now a 100% dedicated gluten-free bakery and are Gluten Free Certified by GFCO. This is big news because it’s great to see a company who recognizes not only the need for YUMMY gluten-free cookies, but also the need for preparation that is free of cross-contamination.

The company revealed that they would no longer be producing wheat cookies which is REALLY FREAKIN’ AWESOME in my opinion. Instead of a company succumbing to the gluten-free pressures and producing one piddly product for us g-free folks, Liz Lovely said, “Hey, we are going to put the gluten-free consumer FIRST and drop the wheat products.” Is that amazing, or is that amazing?

The Vermont gluten-free cookie company also announced their new cookie flavor, the Gluten-Free Cowboy Cookie! All I have to say is YEE-HAW. Made with gluten-free rolled oats, walnuts and dark chocolate, this cookie is something to write home about. I enjoyed the cookies a little bit TOO much. Not to put any of the other Liz Lovely flavors down (because I’m obsessed with them all), but this one had a little somethin’ special. Maybe it was the oats? I’m a g-free oat eater, which I know some of you aren’t, but if you CAN eat gluten-free oats, I highly recommend ordering this cookie to treat yourself.

I also received samples of other Liz Lovely gluten-free flavors. The box full of goodness smelled like heaven when I opened it. I also knew that there would be consequences of the deliciousness, such as tight jeans and slight weight gain following the cookie monster session, but I knew it’d be worth it.

As a former chunker-child who was obsessed with Thin Mints in the pre-GF days, I’ve always been on the lookout for my Thin Mint replacement. I’m happy to say that Liz has successfully exceeded my expectations. To heck with Girl Scout’s Thin Mints, Liz Lovely’s Gluten-Free Triple Chocolate Mint Cookies do it way better for me. The Liz Lovely website even says “Watch out, Girl Scouts!” and boy, oh boy are they right! While these gluten-free cookies aren’t crunchy like the original Thin Mint, they’re loaded with cocoa and chocolate chips, drizzled in dark chocolate, and they scream “EAT ME!” I obviously followed orders. You should, too.

And then there’s the Gluten-Free Snickerdoodles. My mom was responsible for this flavor’s disappearing act, but I can’t really blame her. They’re soft baked cinnamon sugar greatness that will remind you of the good old days of eating homemade cookies in the kitchen with your mom. Or they can just remind you of how you need to have a standing monthly order with Liz Lovely and Cowboy Dan because who needs Mom’s baking anymore, right?

My box of cookie flavors didn’t stop there. I also had the Gluten-Free Chocolate Fudge Cookies which are clearly amazing, just read the name. They literally put brownies to shame. SHAME. I also had some of the classic Gluten-Free Chocolate Chip Cookies. Seriously…delish. The chocolate drizzle on top and the fact that the cookie is as big as my palm really sets it up for g-free success in my book. I enjoyed one of these treats after a long day of work and it pretty much made everything in the world seem better.

Finally, my lucky little taste-buds enjoyed the Gluten-Free Ginger Molasses Cookies. MmMm GOOD. The crystallized ginger all up on the molasses will blow your g-free mind. It’s pretty much the perfect season to enjoy a pack of these babies, too. Hurry up and order some to enjoy this fall!

So there you go, folks. Sorry for making you crave cookies. I really think you should order yourself some of Liz Lovely’s gluten-free cookies and you shouldn’t feel guilty when you consume them really, really fast. I don’t blame you. One thing I love about being a g-free blogger is getting to “meet” so many people I otherwise wouldn’t have the opportunity to meet. One of those people that I am thankful to have gotten to know in the past few years is Jessica Kahn from kitch+table. I’m 99.9% sure that we would be the best of friends if we didn’t live thousands of miles apart. However, I do still get the chance to review her products on the reg, and now her new eCookbook, Stack’d!

Stack’d is an eCookbook full of gluten-free protein pancake recipes. Now, I know what you’re thinking, protein pancakes sound like a chore, but I’m here to tell you that you’re mistaken. The pancake recipes in Stack’d are super easy and you barely even use any dishes to make them (ingredients are blended together in Magic Bullet-style blender), so it’s a win-win.

So far I have made the Blueberry Pancakes in Jessica’s book, and I can’t wait to try a long list of other flavors. For example, Stack’d contains a recipe for Mimosa pancakes…ummmm, is this real life? I’m totally making this for breakfast the next time I have a girls weekend with my non-GF bestie because these babies look so good she won’t give a hoot!

I highly recommend that you purchase Stack’d. The gluten-free eCookbook costs $3.49 on Amazon so don’t go telling me you don’t have the (gluten-free) dough to pay for it. That’s less than half of a burrito bowl at Chipotle, so you aren’t fooling me.

Another great thing about this eCookbook is that the recipes aren’t super difficult so you can actually make them on weekday mornings as well! If you’re anything like me, you’re not trying to get into a time-intensive breakfast on a Monday – Friday morning. I’d like to personally thank Jessica for keeping this in mind when she came up with these wonderful gluten-free pancake recipes.

For those of you that don’t understand the whole “protein” concept behind the pancakes, it basically means that adding gluten-free whey protein in your pancake batter makes it a protein pancake. Not diggin’ the whey? Don’t add it! (I didn’t add it in mine simply because I didn’t have any in my pantry.)

Gluten Free Labels are Awesome: Review & Giveaway!

Long gone are the days of containers with sharpie scribbles of gluten free written all over them. We can step up our game and not be ashamed of the way our labeled gluten-free food-filled containers look!

My gluten-free tub of butter no longer has my scribbles on it, but instead it has a cute, little g-free sticker! I no longer have to write all over the tops and sides of jars because Kelly, the creator of Gluten-Free Labels, has done something that our community has needed for ages – she created a classy way for us to label our food!

In a Shared Kitchen:

Gluten Free Labels are a MUST for a shared kitchen and can help you prevent unfortunate cross-contamination issues from occurring. They would have been a Godsend when I was in college sharing a kitchen with my roommates, but it’s better late than never, right?

I received the Gluten Free Labels Starter Kit in the mail and was ecstatic. The starter kit contains a variety of dishwasher safe labels included 8 circle labels, 12 mini labels, 2 customizable rectangular labels, AND 2 silicon tags, all for $14.99! The first thing I did when I opened up my starter kit was stick one of the circle labels on my container of butter. I always go through this process of “Wait, which one is mine and which one is the gluten-eater of the household’s?” It was great to finally remedy that confusing situation.

The second thing I did with my starter kit was put the silicon tag to use! Just days before receiving the labels in the mail I was 0.2 seconds away from being glutened from a dirty pan that looked clean, so it was a relief to stick the tag on there and not have to worry anymore!

One thing that I think is fantastic about my starter kit is the dishwasher safe labels! Now we can simply designate certain containers to hold only gluten-free food, taking away A LOT of the worry surrounding food mix-ups in shared kitchens.We won’t have to worry about the sharpie markings fading in the dishwasher when we have these great labels!

In regards to the little stickers that you can place on butter, peanut butter, jam, and other similar, you can easily reuse those too! If you usually purchase the same brand of products every time, when one runs out, just put the lid with the label on the new container and voila, you’re labeled and ready to go! Talk about recycling, eh?

At a Party or Potluck:

There’s nothing worse than creating delicious food and setting up a beautiful buffet display, and then ruining it with the words gluten free scribbled on scrap paper. Don’t let the party atmosphere suffer when labeling! Keep it classy with gluten free labels:

  • Stick a gluten-free label on the pan or dish that holds the gluten-free food.
  • Stick gluten-free flags in the gluten-free treats on the dessert table.
  • Loop a silicon tag around the gluten-free serving spoon.

On Adult Beverages:

Ever go on vacation or a long weekend with a group of friends or family and everyone brings alcohol to add to the bar? The percentage of alcohol that is actually gluten free may be small so you’re going to want to take ownership of what you added to the collection.

If you write THIS IS [insert name here]’s BOOZE! all over the bottle, people might think you’re rude. But, if you stick a little gluten-free sticker on the bottle allowing people to realize that not all of the adult beverages are safe for you, you won’t come across as unfriendly.
